Just for the record, I ended up having to cook the roast about 3 hours longer than the recipe called for, and also put the pot in the oven at 350 degrees for the last 2 hours or so, rather than leaving it on top of the stove as the recipe said. But it did turn out to be quite flavourful and the guests seemed to enjoy it, so I am reasonably well pleased.
Also, I am at this very moment printing out the manuscript of my original YA fantasy novel Knife, having done a massive edit (including substantial rewrites and additions) over the past six months. Time alone will tell what Ye Editor thinks of it, but at least I can honestly say I'm happier with the book than I've ever been before, and that I don't regret one minute of the time and effort I spent whipping it into shape. I'm also profoundly grateful to Amy, Erin, Kerrie and Brittany, who gave freely of their time and energy to read the manuscript and make practical suggestions for improvement -- I can definitely say the end product would have been much poorer without your input.
In any case, by tomorrow the book will be packaged up, mailed off, and officially out of my hair for the summer, which will be lovely. *happy sigh*
